Spring is slowly creeping in on us. There’s still that little chill in the air that makes you not want to get out of bed. The one you feel when only your arm randomly searches for the snooze button. Thats us as adults, can you imagine being a kid having to wake up for school? I don’t know about you, but the smell of bacon and apple cinnamon oatmeal are the only two things besides my mom yelling for me to get out of bed for the 10th time, that actually gets me up. There is just something about the scent of cinnamon that wraps around me like a security blanket so cozy and comforting.
When we were kids we would go against the grain if we had the option of oatmeal versus a sugary cereal such as Frosted Flakes. However, as we have gotten older our health and body image has forced us to end our sweet love affair. Yet there’s more to oatmeal. Oatmeal is a power food that is also a high fiber diet and the possibilities are endless. You and your family do not have to eat bland cardboard like oatmeal anymore. Sweeten it with natural sugars from fruits or maple syrup. Let us give our kids a healthy start in life so that they are not forced into eating oatmeal in their later years to lower their cholesterol. Swap out Tony the Tiger for a warm filling bowl of energy booster.
In a small sauce pan add the milk, butter, diced apple and cinnamon spice and bring to a light boil on medium to high heat. Cook for 5 minutes. Add the oats and lower the heat to low/medium and cook until the apples are tender.
Pour into a bowl and drizzle maple syrup or sprinkle light brown sugar. Serve warm. Enjoy!
