There are so many deep philosophical questions floating in the universe that may never be answered. Does God exist? What’s my purpose? How do I throw a fabulous Oscars party? Well I can’t answer the first two questions, but I can give you one recipe that’s sure to get nominated. It’s easy, fun, popular and a must have when watching ….movies.. duh! After all, we are watching a show that’s all about actors and the movies they’ve been in. So save the salmon and caviar canapés and stuff your fancy little face with fancy truffle popcorn. Yes it has truffles and should be enjoyed with it’s perfect costar, champagne. Wash down the delightful kernels with your favorite bubbles for a fun filled night with the stars. Action!
In a large pot, heat the olive oil over medium to high heat, spread the kernels over the hot oil. Cover with aluminum foil or a very tight lid. When it begins to pop start to shake the pot carefully so that the kernels do not burn.
In the meantime, finely grate the asiago cheese. Melt the butter in a saucepan over the stove microwave until it melts. Chop the parsley.
Drizzle the truffle oil into the melted butter and stir to incorporate. Add more if you want the truffle flavor stronger.
Pour the butter/ truffle oil mixture over the popcorn and toss gently. Sprinkle with the cheese and parsley. Season with salt and pepper to taste and serve immediately.
