It’s Monday morning again and we are already counting down the hours and seconds to the weekend. Don’t let the Monday blues get you down. The only blues you need are these super fun and easy blueberry flax pancake muffins. Let the week start off right with a fun and different way to enjoy a breakfast tradition and save yourself time with a bake ahead recipe. Great for busy families or just anyone for that matter. Pop these little fellas in the oven for just 10 minutes while you get ready in the am and you can enjoy the most important meal of the day, with one hand.
Add the pancake mix, flaxseeds, vanilla extract, and water, mix well.
Fold in the blueberries.
Spray the muffin tin with a butter spray and add 2 tablespoons of the pancake mix to each. Spray the top of each before placing in the oven. Bake for 20 minutes. Pierce the center of a muffin with a toothpick to insure the center is cooked. Cool for 5 to 10 minutes before feeding to your child.
Serve along with maple sausage, eggs, bacon and/or a fruit salad of your choice. I went with kiwi and strawberries with maple sausage links. I topped the muffin with butter, whipped cream, and sprinkled cinnamon.
