While everyone is doing “Taco Tuesday,” upgrade your tastebuds to “Truffle Thursday” (Oh, you’re so fancy!). This is your opportunity to shop at Whole Foods, you know that place where one bag of groceries may set you back one months rent… but who cares?!? Say farewell to boring pasta and hello (Adele’s voice) to farfalle pasta smothered in a creamy truffle sauce, with crispy salty pancetta and sweet green peas. You’re welcome.
Cook and drain the pasta and set to the side until the sauce is ready. In the meantime, in the same pot (empty) on medium heat drizzle 1 tablespoon of olive oil and sauté the diced pancetta. Sauté for about 5 to 8 minutes until crispy. Remove from the pot and set to the side. Add the onions and garlic followed by the butter and flour to create a roux the thickening base to the sauce. Slowly add the heavy cream and milk while whisking. Drizzle the truffle oil and add the peas and cheese. Continue whisking.
Add the cooked pasta. Coat the pasta with the creamy sauce.
Toss in the cooked pancetta last. Taste and add pepper and salt (if needed).
Serve while hot along with a warm crusty baguette. Until next time…Save me a seat at your table!
