It’s only February and you absolutely must stick to your weight loss goal. However, the football fanatics will be lurking this weekend and you know you’ll be surrounded by nachos, subs, chips, burgers and dips. You don’t have to miss out on the fun due to temptation. Whether you are hosting a party at your place or attending one, this recipe is sure to be a game stopper. Healthy, fresh, spicy and needless to say…amazing! In fact, everyone else is going to be wondering what you’re eating and how they can get some. Crispy grilled tortilla, bright red tuna, paper thin slices of spicy jalapeño and plump, grape tomatoes drizzled with a fiery wasabi cream. Tuna pizza is perfection in every bite.
Set the grill on medium heat and brush each tortilla lightly with olive oil on each side. Place the tortilla on the grill turning and flipping each one constantly for about 1 to 2 minutes until you get grill marks. You want the tortillas to be toasty.
Thinly slice the block of sushi grade tuna, cherry tomatoes and jalapeño.
Slice the onions paper thin and cut a small piece of the beet and add 2 tablespoons of rice vinegar. Poke the beet to release the juice and to tint the onions.
Begin to arrange the tuna slices over the crispy tortilla and sprinkle the jalapeño and cherry tomatoes evenly.
Do the same with the drained onions and seaweed.
To make the lemon ginger vinaigrette add the ginger, lemon juice, olive oil and sesame seeds and whisk until thick. Pour lightly over each tortilla.
The wasabi cream can be as spicy as you would like. Keep in mind that the pizza already has jalapeño, so don’t get crazy. Mix the sour cream and wasabi paste. Pour into a squeezy bottle or a zip lock bag (TIP: improvise by cutting a tiny hole at the corner tip of the bag and squeeze).
Drizzle as much OR as little as you would like. ; ) Garnish with fresh cilantro leaves, cut and serve immediately.
