It’s that time of year again where we stuff our faces with nachos, dips, wings, burgers and beer as we scream at a flatscreen cheering on our favorite team. With Super Bowl just days away, it’s never too early to start planning your menu to kick off your party. Buffalo wings are usually a “must have” at sports games. However, I always like to give the “usual” my own gourmet touch. I like fun, SUPER tasty and easy finger foods so that I can get back to the task at hand… watching the game!
Begin by placing the shrimp on a plate with paper towels and pat dry the shrimp to remove any excess water. Toss the dry shrimp into a bowl
Melt the butter and drizzle over the shrimp, followed by the seasonings.
Pour just enough buffalo sauce to coat the shrimp.
Fire up the grill on high! You can also do this on the stove top or use a broiler for easy clean up. Cook the shrimp for about 5 minutes until they are fully pink. Keep in mind that the shrimp are small and can overcook quickly. Cook the corn until it has a few grilled marks. Feel free to use canned corn if you want to reduce the workload.
Remove from the grill and lightly drizzle some more Buffalo sauce.
Place the tortillas on the grill upside down for about 30 seconds to toast lightly.
Make your bleu cheese sauce while you wait. Dollop the sour cream, lime juice and crumbled bleu cheese into a bowl and mix well with a spoon.
It’s time to assemble your tacos! Fill each tortilla with a healthy/even amount of the shrimp. Remove the corn from the grill, cut the corn off the cob and sprinkle evenly on each. Do the same with the black beans.
Dollop the bleu cheese sauce on each taco, garnish with fresh cilantro, diced avocado and serve with lime wedges. Enjoy!
