“B” is for banana! Can you imagine a child being called for breakfast and the parents yelling “Sarah, your banana split is ready!” That would be awesome, wouldn’t it?
Today is your lucky day. If you loved this heavenly dessert as a kid, you can now serve it as your first meal of the day. The banana is still the star and the fillings are healthy breakfast items. You can have it with cottage cheese, Greek yogurt or just loaded with fruits.
Replace the hot fudge for fruit preserves and drizzle warm, almond butter. Almond butter is my best friend due to its lack of carbs, protein and good fat. Add chai seeds, coconut flakes, granola and berries for a dish packed with omega 3, antioxidants, and potassium.
This banana split won’t only have you craving one every morning but it will satisfy that hungry belly, boost your metabolism and help your body regulate blood sugar while lowering your risk of a heart attack. It’s never to early to think about your heart.
Start off by slicing the banana in half as you would with a regular sundae
Now spread they nutty (almond butter) goodness on both slabs of banana
Fill it with your choice of cottage cheese, Greek yogurt or even Frozen yogurt
*Cut fruits and it’s even more important to always cut fruits into very small bites to prevent choking if being served to young children
Strawberries are for mommy. Now top off the cottage cheese with the fresh berries
I decided to finish it off with granola and pistachio for a nice crunch. Instead of chocolate syrup we went for un-sweetend cocoa powder because it’s less than half the calories.
Now to serve it to my biggest critic yet #1 fan…
And it was a hit! Whew! so much so he decided to feed himself and not share with momma. There goes that smirk before he attacked!
I hope you enjoy it as much as Phoenix did! Until next time… save me a seat at your table!
