Forget about the canned tuna fish sandwich full of mayonnaise squeezed between 2 slices of soggy bread. You will be the envy of the break room with this meaty righteousness as this is the glory of all lunch sandwiches. After this meal you won’t find yourself munching on nuts 30 minutes after your break because you’re hungry. Oh no baby! This will hold you until 5pm. Is it lunch time yet?
Start off by filling your food processor (or blender) with all of the pesto ingredients (except for the oil).
While the food processor is on, slowly drizzle in the olive oil slowly until it’s well incorporated and it looks like this. Now place it to the side.
Sauté the onion slices in butter for about 5-6 minutes on low-medium heat until they become caramelized
Now get all your goodies in front of you, it’s time to build this delicious sandwich
Smear about 1/2 tablespoon pesto on each slice of bread
First layer: pesto and pastrami. Second layer: slice with pesto, caramelized onions topped with cheese. Third layer: slice with more pesto.
Refrain from taking a bite just yet. Fire up the pan and melt 1 tablespoon of butter for each side. Set the flame on low heat cook for about 10 mins and watch magic happen…
