I’m a believer that children should not be deceived as to what they are eating. I feel that parents should educate and encourage their kids to eat healthy in order for them to make smart food decisions on their own. For parents of picky eaters, I have a created a favorite dish packed with nutrients and fiber. It’s gooey and yummy! I prefer to use whole wheat pasta for its fiber content, unlike boxed powder mix mac and cheese which has little nutritional value this is the real deal. The color comes from a sweet potato and carrot puree. The sauce is thickened with a roux (butter & flour) and a small amount of cheese. It is garnished with fresh herbs for a kiddie gourmet meal.
Cook the pasta a little past al dente. In a separate pot, cook the carrots and sweet potato well done. Strain (reserving some water), transfer to the blender
Puree on high speed gradually adding some of the leftover water from the pot until you’re able to coat the back of your spoon like this:
Now to get started on the roux which is the glue to bind everything together… the result is cheesy sauce. Add butter and flour on low-medium heat stirring constantly. You will see it begin to thicken, add milk until it thickens, followed by the puree. Season with salt and pepper to taste
Toss in the chopped herbs, cooked pasta and cheese (feel free to add broccoli too). Season with salt and pepper to taste
I hope your kiddies enjoy the loaded mac-n-cheese as much as our son.
Note: If you’re a busy parent double up on this recipe and divide into a freezer safe container. Just thaw, reheat and serve.
