These multigrain pancakes with frozen sour cherry and basil yogurt are the perfect way to start off your Valentine’s Day. Make them together, or surprise the love of your life with breakfast in bed- either way, you can’t go wrong! Begin by making a jam to flavor your frozen yogurt. Jam is so fun an easy to make. All you need is a simple 1 to 1 ratio of sugar and fruit, and a splash of lemon juice. Since cherries are low in pectin (pectin makes jelly, jelly) I added a half an apple (apples are high in pectin).
Cook until the mixture reaches 210F. Be cautious! This liquid is very hot and can severely burn!
Mix 1/2 cup of jam with 1 1/2 cup of cherries. I’m a lover of all things tart so I used a mixture of half sweet cherries and half sour cherries. Yum! Add your chopped basil and lemon zest. All you have left to do is mix the jam into your frozen yogurt and voila! Sour Cherry and Basil Frozen Yogurt. Deeeelish!
These multigrain pancakes are absolutely delicious and are so, so easy to throw together! They require lots of ingredients but let me just assure you that they’re worth it and that you’ll be using them again…
Mix your dry ingredients (all five billion of them…)
Mix your wet ingredients.
Combine the two and voila! Multigrain pancake batter.
To make this an extra special Valentine’s day breakfast, I poured my batter into a piping bag and piped a cutesy heart onto my hot griddle.

2 teaspoons lemon juice
zest of 1 lemon
